Snickers Cheesecake

When I was little, we had a small shop nearby, where you could have bought a delicious cheesecake called 'snickers'. We used to buy it every weekend and devour it very quickly :) But the shop was closed and the cheesecake disappeared. We couldn't have found it anywhere (well, definitely not same tasty). Now, a good few years later I thought that it would be wonderful to prepare it on my own, especially that I have some snickers fans here. And so I did prepare it, with a little help of KwestiaSmaku.
It is definitely worth trying! I do recommend. Half of it disappeared during the first hour of its existence, hihi :) 


Note:
  • This cheesecake needs to be prepared a day earlier as it needs to stiffen in the fridge.
  • Some ingredients must be in a room temperature.
  • It is good to buy unsalted peanuts - You can control how salty Your cheesecake will be.


Ingredients:

Bottom:
  • 350-400g of cocoa biscuits 
  • 50-100g of melted margarine or butter
  • 2 tablespoons of baking cocoa

Cheesecake (all the ingredients need to be in a room temperature):
  • 1kg of cheesecake
  • 150-200 g of sugar
  • 3 tablespoons of potato flour or powdered vanilla custard (budyn)
  • 5 eggs
  • 125ml 36% cream
  • 3 teaspoons of vanilla extract

Top:
  • 2 tins of fudge
  • 350g of peanuts (unsalted)
  • some salt (3-5 pinches)
  • optionally - few snickers bars cut into small pieces

Preparation:

Bottom:

  1. Crush the biscuits into very small pieces, for example using a blender's cube cutter (biscuits might be crushed into 'sand').
  2. Add cocoa, stir, add melted butter, stir again, precisely. You can check with a spoon or a hand if the biscuits are sticky enough, it can't be dry and powdery.
  3. Take a baking pan, put baking paper all over it, add biscuits, distribute all over the pan and knead with a hand or a tumbler.
Cheesecake:
  1. Start preheating the oven to 175C.
  2. Remember that all the cheesecake ingredients need to be in a room temperature.
  3. Take a mixer and its bowl, put cheese, sugar and flour inside, mix on a low/middle rotation only till the mixture gets smooth (not longer than 2 minutes).
  4. Add eggs, one after another, mixing after each of them for a few seconds.
  5. Add 36% cream and vanilla extract and mix on a low rotation only till it links.
  6. Pour the mixture into previously prepared rectangular pan with biscuits bottom.
  7. Put in the oven and bake for 15 minutes in 175C. After that time, decrease the temperature to 120C and bake for another 1 hour and 30 minutes, till the cheesecake stiffens (it might still be a little jelly-like in the middle, it is okay, it will stiffen in the fridge).
  8. After that time, turn off the oven and cool down the cheesecake in a slightly opened oven.
  9. When cooled down completely, put in the fridge for a few hours (most preferably - for the entire night).
Top:
  1. Take a non-stick pot, pour both tins of fudge inside, turn on a low heat. Stir, adding peanuts. 
  2. Add salt - one pinch, taste, another - as much as you prefer. Note that after a while the taste will slightly change as the salt will completely dissolve and mix with fudge, changing its taste.
  3. Turn off the heat. 
  4. Cool the mixture down a little bit, stiring all the time.
  5. Take the cake out of the fridge, distribute the fudge with peanuts all over the cake.
  6. Store in the fridge.

Orange-Chocolate Cheesecake


I was pretty unsure about this Cheesecake as I was doing it completely on my own and I was afraid of many, many things. But... I served it and all the guests were stunned! Asking where did I buy it. And they were even more shocked when I told them that I did it on my own :) And everyone, literally, everyone asked for the recipe! That's the best award I could have got for that cheesecake :) So now I'm sharing the secret for a perfect Christmas Cheesecake with You :) 
Some details: This cheesecake has a consistency of a mousse, so it melts on a palate, it's quite refreshing, because of oranges and what is its biggest advantage - it's easy and quick to prepare, because without turning on the oven ;) Enjoy! :)


Bottom of the cake:
  • 200g of chocolate shortbread-like biscuits
  • 80-100g of melted butter

Cheesecake: (all the ingredients must be in a room temperature except for water)
  • 500g of cheesecake cheese (might be vanilla flavoured)
  • 250g of mascarpone cheese
  • 250ml of 36% cream
  • 100-140g of powdered sugar* 
  • 1/2-1 teaspoon of orange extract
  • 100g of orange skin
  • 40g of powdered gelatin
  • 140 ml of boiling water

Decoration:

*About the powdered sugar: here are two nice propositions. First one, is to add a lot of powdered sugar to the cheesecake - around this 140g. If so, the cheesecake mousse is really sweet. But, it is also a good idea, to add only around 90-100g of powdered sugar and after the cake is done, to distribute Royal Icing(recipe is here) on the top of the cake.

Preparation:

Bottom:
  1. Take a springform cake tin. 
  2. Put baking paper on the bottom of the tin.
  3. Take the cookies and crumble them on a very small, sand-like pieces.
  4. Mix precisely with butter. It needs to have a consistency of a wet sand.
  5. Put in a tin, align, make smooth, knead.
  6. Put in the fridge for at least 20 minutes.

Cheesecake:
  1. In a glass, mix gelatin with hot water and stir till gelatin melts completely. Put aside so that it cools down.
  2. Take a mixer and its bowl. Put cheesecake cheese inside, add mascarpone, cream and mix till completely smooth.
  3. Add powdered sugar and orange extract and mix till smooth again (it is advisable to taste the cheesecake to check if it is sweet enough).
  4. Take a spoon. Take around 3 tablespoons of the cheesecake mixture and mix with gelatin. Stir precisely, it needs to link.
  5. Put the gelatin-cheesecake mixture back in a mixer's bowl. Mix precisely.
  6. Add orange skin and mix again.
  7. Pour on the bottom. Put in the fridge till it stiffens.
  8. If desired - add icing and decorate for example with oranges, anise.
  9. Keep in the fridge.

Summertime cheesecake

A very tasty mix of 2 recipes + my own creativity :) 
Fresh, light, non-baking cake, perfect for a summertime coffee in a green, blossoming garden.
One recipe comes from this website and just the 'appearance' idea from this one.

Ingredients:
  • 4 packagings of ladyfingers
  • 2 tins (400 g each) of coconut milk
  • 1 kg of creamy quark (the one for cheesecakes)
  • 1/2 - 3/4 glass of sugar
  • 6 teaspoons of gelatin
  • strawberry jelly
  • strawberries, blueberries for decoration


Optional ingredients:
  • 80 ml of Malibu liqueur
  • whipped cream


Preparation:
  1. Take a spring pan. Grease it, put baking paper on the bottom. Put some ladyfingers on the bottom (only one tier).
  2. Open the tins with the coconut milk. Fill the entire glass with part of it and the rest of the coconut milk pour to the bigger bowl, add quark, sugar and liqueur. Stir.
  3. Take the glass with coconut milk and pour it to the pan. Add gelatin and heat on low heat, stiring all the time till the gelatin melts. Do not boil.
  4. Take a big bowl, put the coconut milk with gelatin inside and partially add the mix from the other bowl with quark, stiring all the time so that everything links. Pour it to your springpan with ladyfingers on the bottom.*
  5. Put it in the fridge for 10-20 minutes. Keep checking what's going on. If ladyfingers are on the top, using a spoon, plundge them in. The quark-substance gets thicker.
  6. Leave the cake in the fridge. Prepare the jelly as the packaging says. 
  7. Stir, cool it down, so that you get cold liquid.
  8. Pour the jelly on your cake. Leave, so that it solidifies. (Keep checking by shaking gently the spring pan)
  9. Put the fruit on the top. You can add whipped cream on the top as well.
  10. Keep in the fridge, so that it completely solidifies (5 hours - entire night)
  11. After that time, open the sides. If the cake is sticky - then just stick the ladyfingers. If not - apply some whipped cream on the sides and then stick the ladyfingers.**

* Don't worry if ladyfingers don't stay on the bottom after adding quark-substance.
