Chocolate Cake

I do enjoy baking birthday cakes for my friends. I always ask them for their favourite flavours and prepare a perfect cake. And Martha's frosting - oh my, that was the most wonderful chocolate mixture I've ever eaten! Unfortunately, as it was a gift, there is no picture from the inside.
Recipe for a sponge cake comes from my favourite Polish website and the best chocolate frosting comes from my favourite cook, Martha Stewart.


Ingredients:

Cocoa Sponge Cake:
  • 7 eggs
  • 1 glass of sugar
  • 2/3 glass of baking cocoa
  • 2/3 glass of flour

Filling:
  • 350g of cherry jam
  • 500-700g of cherries without kernels
  • optionally - 4-5 tablespoons of cherry liqueur, for example from that recipe

Whipped cream:
  • 1/4 glass of water
  • 2 teaspoons of gelatin
  • 750ml of 36% cream
  • 1/4 glass of sugar

Top:
  • 1 pack of candied cherries
  • 1 pack of chocolate decorations
  • chocolate frosting

Chocolate frosting:
  • 226g of bittersweet chocolate
  • 226g of milk chocolate
  • 355ml of 36% cream
  • 2 tablespoons corn syrup
  • 340g of butter, soft but cool, cut into small pieces

Preparation:

Sponge cake:

  1. Prepare a springform (diameter 24cm) and cover the bottom with baking paper.
  2. Take a bowl, sieve cocoa and flour inside.
  3. Separate egg yolks from egg whites.
  4. Start preheating the oven to 170C.
  5. Take a mixer and its bowl, put egg whites inside and beat for 2 minutes on a low rotation, Gradually higher the speed of the mixer and start adding sugar. Beat the egg whites for a few minutes till stiff and shiny. Still, while beating, start adding egg yolks, sepatarely, adding another when the previous one is precisely mixed with egg whites.
  6. Turn the mixer off.
  7. Sieve cocoa/flour mix slowly to the eggs mixture and using a spatula, slowly, gently stir till all the ingredients mix.
  8. Pour the dough into previously prepared sprinform, put in the oven and bake for 35-40 minutes, to the point of a dry toothpick.
  9. After that time, take the sponge cake out from the oven and energetically throw on a kitchen surface ( :) ). Cool down,
Filling:
  1. Mix all the ingredients of the filling (also alcohol, if desired). Divide into 2 equal bowls.
  2. Using a knife, cut the sides of the sponge cake, open springform, put the sponge cake upside down to take out the baking paper. 
  3. Using thread or a big knife, cut the sponge cake lengthwise, into 2 (or if possible 3) equal layers.

Prepare whipped cream:
  1. Put 36% cream in the freezer.
  2. Boil 1/4 glass of water. Put gelatin inside, stir till gelatin melts. Cool down.
  3. Take a mixer and its bowl, put 36% cream inside, start beating. Add sugar and beat till stiff. Mix in the gelatin liquid.
  4. Divide into 2 equal bowls.
Layers:
  1. Take a cake plate, put first piece of sponge cake on it. Distribute filling from the first bowl with cherries. Cover with one bowl of whipped cream. 
  2. Put another layer of cake and repeat steps with filling.
  3. Cover with the last piece of sponge cake.
  4. If there is any excess of the filling, sticking out on the cake's sides, take it out.

Chocolate frosting:
  1. Take a mixer's bowl, chop both the bittersweet and milk chocolates and put inside it. Set aside.
  2. Take a pot, put 36% cream and corn syrup inside, bring to boil. Take off the heat and pour the mixture over a bowl with chocolates. Let it stand for 2-3 minutes, so that the chocolate melts. Stir till smooth. Cool down.
  3. When cooled down (room temperatured), start beating with a stand mixer and gradually add butter until smooth and silky.
  4. Using an offset spatula, distribute the frosting all over the cake, leaving some for decoration.
  5. Decorate the cake with a spatula, syringe, etc.
  6. Serve immediately, or keep covered with a cake dome in the fridge. Let sit at room temperature for about 20 minutes before serving.

Sweet Meringue Plum Cake

I always wait so impatiently for plum season. I do love preparing plum cakes, they're always so delicious (even though I'm not really a plum-fan ;) )! I know I've waited too long to share this cake with You, but I hope that - at least for some of You - it is not too late :) Besides, it is possible to use frozen plums ;)
This is another wonderful and elegant cake from KwestiaSmaku, which I share with You today and also I do recommend to try this one, right after the very best plum cake, which You can find here.



Ingredients:

  • 250g of flour
  • 50g of sugar
  • pinch of salt
  • 1 teaspoon of baking powder
  • 200g of margarine
  • 4 egg yolks
  • 1kg of plums (without kernels, cut into halves) fresh or frozen (need to be defrost)

Budyń/Custard (it is possible to double the amount of custard in this cake):
  • 1 packaging of vanilla custard (40g)
  • 500ml of milk
  • 2 tablespoons of sugar

Meringue:
  • 4 egg whites 
  • 200g of sugar
  • 3 teaspoons of potato starch 


Optionally - one of these:
  • A handful of hazelnuts, to sprinkle the top (I skipped it)
  • almond flakes (to sprinkle the fruit) 
  • shredded coconut (to sprinkle the fruit or to mix with meringue)

Preparation:

Dough:
  1. Start preheating the oven to 170C.
  2. Prepare a rectangular baking pan (around 26x36 cm), grease it and put baking paper all over it.
  3. Take a big bowl, put flour, sugar, salt and baking powder inside. Mix. Add cold butter and knead till you get crumbles.
  4. Add egg yolks and knead again.
  5. Distribute evenly all over the bottom of previously prepared baking pan and bake in preheated oven for around 20 minutes, till it becomes gold.
  6. Take it out from the oven.
Custard + plums:
  1. Prepare the custard as the instructions on a packaging says (using 500ml of milk + 2 tablespoons of sugar). 
  2. When the custard is ready, pour it all over the previously baked bottom.
  3. Add plums, cover the entire cake bottom with them (there is no need to wait till the custard cools down). Make 2 layers of plums, one on another.
  4. Optionally - sprinkle with almond flakes or shredded coconut if desired. Set aside.
Meringue + finishing the cake:
  1. Take a mixer and its bowl, put egg whites inside, beat, adding sugar gradually, till it stiffens (around 10-15 minutes). At the end, sieve potato starch inside and mix till smooth.
  2. Here - if You haven't and You do fancy to do it - you can mix in some shredded coconut.
  3. Distribute the meringue all over the top of the plums.
  4. Bake for 20 minutes, setting the temperature as previously, on 170C.
  5. After 20 minutes, decrease the temperature to 60C, turn on the hot air cooking, (optionally sprinkle the top with hazelnuts) and bake for another 20 minutes.
  6. Take out from the oven.
  7. Bon Appetit! :)

Carrot Cake #1

When the owner of MojeWypieki says this is the best carrot cake you've ever eaten, then... it really is the best carrot cake you'll ever eat, if you decide to prepare it. What a taste, my Godness! I can't believe how quickly did this cake disappear! I'm lucky I managed to snap some pictures for You!
This is a must-bake. It looks wonderful, it is possible to decorate it in many different ways, it can also be served as a birthday cake. 
What's more, the wonderful taste - thanks to all the spices - gives it a little bit an aroma of Christmas... :)
Here is the source, I changed it just a little bit :)

Before baking:

  • This cake is for a small springform (diameter -> 20 cm), if You wish to make it much bigger, it is neccessary to double all the ingredients.


Ingredients:

For the dough:
  • 2/3 glass of flour
  • 1/2 glass of sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon of cinammon
  • 1/4 teaspoon of ground cloves
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1/3 glass of oil 
  • 2 eggs, beaten
  • 1 glass of walnuts, chopped
  • 1/2 glass of chopped pineapple (fresh or tinned one)
  • 1 full glass of ground carrots
For the filling&top:
  • 250g of philadelphia cheese
  • 6 tablespoons of butter (room temperatured)
  • 1,5 glass of powdered sugar, sieved
  • 1/2-1 teaspoon of vanilla extract
Decoration ideas:
  • Any pattern desired made of cinnamon powder or cocoa
  • Walnuts
  • Edible carrots
  • Chocolate flowers
  • ... :)

Preparation:
  1. All the ingredients needs to be room temperatured.
  2. Take a springform, grease it and put baking paper all over. Set aside.
  3. Take one big bowl, sieve into it all the 'dry ingredients' inside (flour, sugar, salt, baking powder, baking soda, spices)
  4. In another bowl, beat eggs and oil.
  5. Mix both bowls, add carrot, walnuts, pineaples and stir precisely with a spoon.
  6. Pour the dough into the springform and bake in 175C for 30-40 minutes (to the point when the toothpick comes out dry).
  7. Set aside, in the springform, to let it cool down.
  8. Meanwhile, prepare the filling&top.
  9. Take a mixer and its bowl, put all the ingredients inside and mix till bright. (It is advisable firstly to add 1/2 teaspoon of the extract and check if it isn't already too strong).
  10. When the cake cooled down completely, open the springform and cut the cake lengthways into two pieces.
  11. Put half of the filling on the first piece of cake, cover with the other one, distribute the remaining filling on the top and decorate.
  12. Keep in the fridge (though the filling is strong and will remain as beautiful as it is in a room temperature for a quite long time).

Raspberry Charlotte Cake

This perfect cake has only perfect advantages :) perfectly literally! :) It is perfect for a gift, it looks gorgeous, tastes wonderfully, it is extremely easy to make and doesn't require using an oven :)
The recipe, slightly changed, comes from this website.


Notes:

  • Prepare this cake at least an evening earlier as it needs to stiffen in the fridge for a good few hours.
  • Please note that You need to use 16cm springform cake pan, unless the cake will be destroyed.
  • Make sure your springform pan is perfectly clean and do not use baking paper, as it will stick to the raspberry foam, get moist and after all, you'd end up with another cake layer, made of baking paper.


Ingredients:

  • 200 g of Savoiardi/ladyfingers (around the cake)
  • red, forest fruit (top)

Raspberry mousse (bottom):

  • 350g of raspberries (fresh or frozen - if so, defrost)
  • lemon juice from 1/2 of lemon
  • 1/3 glass of sugar
  • 2,5 teaspoon of powdered gelatin
  • 200ml of 36% cream, cool
Raspberry cream:
  • 250g of mascarpone cheese, cool 
  • 150ml of 36% cream, cool
  • 3 tablespoons of powdered sugar
  • 1,5 teaspoon of powdered gelatin + 30ml of hot milk
  • 150g of raspberries (fresh or frozen - if so, defrost)

Preparation:

Raspberry mousse:
  • Take a pot, put raspberries, lemon juice and sugar inside. Bring to boil, stiring from time to time.
  • Sieve, to get a mousse without small seeds. 
  • Dissolve gelatin in a small amount (a tiny little bit, just to cover the gelatin) of boiling water, stir so that it melts completely. 
  • Bring the mousse to boil again and add previously prepared gelatin. Stir precisely. Set aside, it needs to cool down completely.
When cooled down:
  1. Prepare a clean springform cake pan and keep it handy.
  2. Beat 36% cream for around 5-7 minutes with a mixer (till the whipped cream is stiff). Stop mixing and slowly, spoon after spoon, add cooled down mousse. Stir gently, till it all links.
  3. Pour the mousse to the springform. Cover for with foil and put in the fridge to let it stiffen for few hours.
When ready, prepare raspberry cream::
  1. Take a small bowl/pot, put 30ml of milk inside, heat till hot. Add 1,5 teaspoon of powdered gelatin and stir till it melts completely. Set aside so that it cools down.
  2. Take another bowl suitable for mixing and put mascarpone, 36% cream and powdered sugar inside. Beat till stiff. Add raspberries and cooled down gelatin(melted in milk). Mix till everything links.
  3. Put on the top of the cake, distribute equally all over. 
  4. Cool down in the fridge for another few hours.
Finishing:
  1. When stiff, take out from the fridge. Using a knife, cut the cake around, very close to the sides of the springform, to make taking it out from the springform easier. 
  2. Take ladyfingers, stick them around the cake (the mousse is sticky, ladyfingers will stick easily).
  3. Take a ribbon, decorate the cake with it, tying it around the cake.
  4. Decorate the top of the cake with (preferably) forest fruit.
  5. Store in the fridge.
  6. Bon Appetit! :)

Tropical Apple Pie

The second I saw this recipe I knew - this is going to be the best apple pie in the Universe. So I made it, twice bigger than the original recipe says ;) And I was perfectly right :) I had quite a lot of it, all the guests were smitten with it, I gave some 'takeaway' portions and I was receiving calls and txt messages with compliments and asks for the recipe for the entire afternoon ;)
So, here, again, bravo for KS for another wonderful recipe!
I changed the original recipe, I've added more margarine, thanks to this change it has absolutely different taste and is way better, believe me!



Ingredients:

Dough:
  • 6 glasses of flour
  • 12 tablespoons of powdered sugar
  • 2 pinches of salt
  • 345g of butter
  • 235g of margarine
  • optionally - if the dough isn't sticky enough - add a little water

Filling:
  • 1800g of apples (cut into a little bit thicker slices)
  • 900g of pineapple (fresh or tinned, cut into small pieces) 
  • 1/2 glass of brown sugar
  • 2 teaspoons of ground cinnamon
  • 1 vanilla sugar
  • 2 packagings (40g each) of vanilla powdered budyń (or 1/2 glass of potato starch)
  • a handful of almond flakes or shredded coconut

Optionally:
  • filling: a handful of raisins (of course if You like raisins, add as much as You like, though not more than 1 glass)
  • top: 1 beaten egg to spread on the top, before baking
  • top: powdered sugar, to sprinkle the top of the cake, after baking

Preparation:

Dough:
  1. Take a big bowl, sieve flour and powdered sugar inside, add salt as well as butter and margarine cut into small pieces. Knead or mix till everything links (especially butter and margarine). If the dough isn't sticky enough and You can't form a ball, add a little water.
  2. Divide the dough into 2 pieces, cover with foil and put in the fridge for an hour.
  3. During that time, prepare a suitable baking pan (around 30x40 cm) - grease it and cover with baking paper. Also, during that time, prepare the filling.
Filling:
  1. Wash, peel, cut the apples (cut out the kernels and throw away) and put in a big pot or bowl. 
  2. Do the same with the pineapple and mix with apples.
  3. Optionally, add raisins to the same pot/bowl and mix.
  4. Add sugar, cinnamon, vanilla sugar and budyń/potato starch and mix precisely.

Baking:
  1. Start preheating the oven to 190C.
  2. Take the first part of the dough, distribute all over the bottom of the baking pan and its sides.
  3. Add mixed filling.
  4. Sprinkle with almond flakes or shredded coconut.
  5. Take the second part of the dough from the fridge and - either make a crumble or roll out the pastry thinly and cover the cake or roll out the dough thinly, cut into stripes and make a chequered pattern.
  6. Optionally - beat 1 egg and distribute all over the top.
  7. If the oven is ready, put the cake inside and bake for 70 minutes till golden brown.
  8. If the top or bottom is getting too dark and isn't ready - cover the top with a piece of foil and the bottom, for example with baking tray.
  9. Take out from the oven and serve for instance with powdered sugar on the top or with some vanilla ice cream.

Snickers Cheesecake

When I was little, we had a small shop nearby, where you could have bought a delicious cheesecake called 'snickers'. We used to buy it every weekend and devour it very quickly :) But the shop was closed and the cheesecake disappeared. We couldn't have found it anywhere (well, definitely not same tasty). Now, a good few years later I thought that it would be wonderful to prepare it on my own, especially that I have some snickers fans here. And so I did prepare it, with a little help of KwestiaSmaku.
It is definitely worth trying! I do recommend. Half of it disappeared during the first hour of its existence, hihi :) 


Note:
  • This cheesecake needs to be prepared a day earlier as it needs to stiffen in the fridge.
  • Some ingredients must be in a room temperature.
  • It is good to buy unsalted peanuts - You can control how salty Your cheesecake will be.


Ingredients:

Bottom:
  • 350-400g of cocoa biscuits 
  • 50-100g of melted margarine or butter
  • 2 tablespoons of baking cocoa

Cheesecake (all the ingredients need to be in a room temperature):
  • 1kg of cheesecake
  • 150-200 g of sugar
  • 3 tablespoons of potato flour or powdered vanilla custard (budyn)
  • 5 eggs
  • 125ml 36% cream
  • 3 teaspoons of vanilla extract

Top:
  • 2 tins of fudge
  • 350g of peanuts (unsalted)
  • some salt (3-5 pinches)
  • optionally - few snickers bars cut into small pieces

Preparation:

Bottom:

  1. Crush the biscuits into very small pieces, for example using a blender's cube cutter (biscuits might be crushed into 'sand').
  2. Add cocoa, stir, add melted butter, stir again, precisely. You can check with a spoon or a hand if the biscuits are sticky enough, it can't be dry and powdery.
  3. Take a baking pan, put baking paper all over it, add biscuits, distribute all over the pan and knead with a hand or a tumbler.
Cheesecake:
  1. Start preheating the oven to 175C.
  2. Remember that all the cheesecake ingredients need to be in a room temperature.
  3. Take a mixer and its bowl, put cheese, sugar and flour inside, mix on a low/middle rotation only till the mixture gets smooth (not longer than 2 minutes).
  4. Add eggs, one after another, mixing after each of them for a few seconds.
  5. Add 36% cream and vanilla extract and mix on a low rotation only till it links.
  6. Pour the mixture into previously prepared rectangular pan with biscuits bottom.
  7. Put in the oven and bake for 15 minutes in 175C. After that time, decrease the temperature to 120C and bake for another 1 hour and 30 minutes, till the cheesecake stiffens (it might still be a little jelly-like in the middle, it is okay, it will stiffen in the fridge).
  8. After that time, turn off the oven and cool down the cheesecake in a slightly opened oven.
  9. When cooled down completely, put in the fridge for a few hours (most preferably - for the entire night).
Top:
  1. Take a non-stick pot, pour both tins of fudge inside, turn on a low heat. Stir, adding peanuts. 
  2. Add salt - one pinch, taste, another - as much as you prefer. Note that after a while the taste will slightly change as the salt will completely dissolve and mix with fudge, changing its taste.
  3. Turn off the heat. 
  4. Cool the mixture down a little bit, stiring all the time.
  5. Take the cake out of the fridge, distribute the fudge with peanuts all over the cake.
  6. Store in the fridge.
  7. Bon Appetit :)

Sunflower cake

Ohh delicious! Remains in a constant battle with Gourmet Sensation ;) I have no idea which one is better! Easy to make, will smitten all your guests ;) 
P.S. here is a small secret: as this cake contains sunflower seeds, it is claimed that it is very beneficial for men (prostate).
This particular recipe is my cousin's own :)

Ingredients:

Sponge cake:
  • 7 egg whites
  • 7 egg yolks
  • 1 glass of sugar
  • 2/3 glass of baking cocoa
  • 2/3 glass of flour

Sunflower frosting, part 1:
  • 200g sunflower seeds (or 100g sunflower seeds + 100g walnuts)
  • 100g of butter
  • 8 tablespoons of sugar
  • 4 tablespoons of milk


Sunflower frosting, part 2:
  • 300g of butter
  • 1 tin of fudge

Optional ingredients:
  • 1/3-1/2 glass of vodka


Preparation:
Sponge cake:
  1. Take a rectangular baking pan, put baking paper all over it. Put aside.
  2. Take a bowl, sieve flour and cocoa to that bowl, twice.
  3. Put egg yolks in another bowl and stir/beat, so that they link. Put aside.
  4. Start preheating the oven to 170C.
  5. Take a mixer and its bowl, put egg whites inside and beat on a low rotation for around 2-3 minutes, till the foam appears. At this moment start adding sugar, spoon after spoon. The mixer can work faster right now. Now beat the eggs for additional 8 minutes.
  6. After those 10 minutes or so, while still mixing, keep adding egg yolks, one spoon after another, making sure that the egg yolks linked precisely with egg whites before adding another spoon. 
  7. Turn off the mixer and using a spatula, slowly, gently, in 3 parts, add flour+cocoa to the mixer's bowl.
  8. Pour the dough into previously prepared baking pan and bake for 25-30 minutes, checking, with a toothpick, if it is ready as it may take a little bit more or less time.*
  9. Take the cake out from the oven and throw on a kitchen's surface.
  10. Cool down.


    * and, as always - if you see that your toothpick is absolutely clean and the cake seems ready - don't hesitate to take it out from the oven. Also, if you know that your oven tends to burn the top of the cake and you can see that your top starts to burn, put foil all over that top, it will prevent it from burning, and keep baking. On the other hand - if your oven tends to burn the bottom - put a baking tray under your baking pan with a cake.

    Sunflower frosting, part 1:

    1. Take a pot, put butter, sunflower seeds and milk inside, boil.
    2. Take a baking paper, put the mixture on it and bake in the oven for 20 minutes in 180C.
    3. After that time, take the sunflower seeds out from the oven, let it cool down and crush into small pieces. 


    Sunflower frosting, part 2:
    1. Take a mixer and its bowl, beat the butter (around 8 minutes). Add fudge, mix again till it links.
    2. Add some sunflower seeds-mixture (part 1), leaving some part of it to sprinkle the top, and mix again.
    3. Here is a moment to add alcohol, if desired. Preferably - add one tablespoon of vodka, taste if it is strong enough for you - if yes, the frosting is ready, if not - keep adding till you feel it is enough.

    Finishing:
    1. Distribute the frosting all over the cake, sprinkle with remaining sunflower seeds mixture from part 1.
    2. Store in the fridge, covered.
    3. Bon Appetit! ;)

    Cherry Cube

    Ohh wonderful! Truly chocolate, soft, mouth-watering - and - to my great surprise - it is not heavy and not extremely sweet :) frankly, it is its enormous advantage! 
    This cake will wonderfully decorate your table and enrapture your guests. I do recommend.
    Recipe, slightly changed, comes from this website.


    Ingredients:

    Cocoa dough, part 1:

    • 3/4 glass of oil
    • 1/2 glass of water
    • 1 glass of sugar
    • 3 tablespoons of baking cocoa

    Cocoa dough, part 2:
    • 5 egg yolks (room temperatured)
    • 5 egg whites(room temperatured)
    • 1/2 glass of white sugar
    • 1,5 glass of flour
    • 1 teaspoon of baking powder
    • 1 teaspoon of baking soda

    Cherry cream:
    • 500ml of 36% cream, very cold (before using, put in in the freezer for around 15 minutes)
    • 800g of cherries (fresh or frozen)
    • 2 tablespoons of lemon juice
    • 5 tablespoons of sugar
    • 24g (=6 teaspoons =6 gelatin leaves) of powdered gelatin 

    Chocolate frosting (ganache):
    • 125 ml of 36% cream
    • 125g of chocolate (I used 70% cocoa chocolate, but you can use half of milk and half of plain chocolate)

    Additional ingredients:
    • Glacé cherries for decoration
    • 1/2 glass of cherry brandy or amaretto
    • whipped cream

    Preparation:

    Dough:
    1. Put all the ingredients from part 1 in a pot. Start boiling, stir, till all the ingredients link and sugar melts. Turn off the heat and cool down.
    While the first part is almost cooled down, time for part 2:
    1. Sieve the flour, baking powder and baking soda. Put aside.
    2. Take a rectangular baking pan (preferably 25x35cm). Put baking paper all over it.
    3. Take a mixer and its bowl, put egg whites inside and start beating (it will take 10 minutes). At the end of that time, gradually start adding sugar.
    4. Add egg yolks and mix, on a low rotation, till smooth.
    5. Add cooled down 'part 1' and stir precisely with a spatula or spoon. 
    6. Pour the dough into previously prepared baking pan.
    7. Bake for 35-45 minutes minutes in 180C. Preferably, as always - check if the cake is ready with a toothpick.
    8. Cool down in an open oven.
    While the cake is cooling down, prepare the filling:

    Cherry cream:
    1. Take a big pot, put cherries inside (no need to defrost frozen ones), add sugar, lemon juice and bring to boil.
    2. After that time, if there is too much cherry juice in your pot (especially from frozen cherries) take all of it out, so that only cherries remain in a pot.
    3. Take a blender and mix till smooth.
    4. Put gelatin in a glass, cover with hot, boiling water (just a little bit of boiling water, to cover the gelatin is enough) and keep stiring till the gelatin dissolves.
    5. Add to blended cherries and stir precisely. Let it cool down completely.
    6. Take a mixer with its (another ;) ) bowl, put 36% cream inside and beat till stiff (depends on mixer's power it will take between 5-10 minutes).
    7. In 3 parts, start adding cooled down cherry mixture. When done, put in the fridge for a while.

    Finishing:

    1. Take a big piece of baking paper. 
    2. If the cake cooled down completely, cut into equal 2 pieces (the best way to do it is to use a thread).
    3. Put the first piece of cake on your baking paper. Lift it, and put it back in the baking pan.
    4. Here is a good time, to take alcohol and with a spoon, distribute it all over the piece of cake.
    5. Cover with cherry filling, put another piece of cake (add alcohol if desired) on it and the remaining part of the filling. 
    6. Put it in the fridge for around 15-20 minutes. During that time, prepare the chocolate frosting.

    Ganache:
    1. Chop the chocolate into small pieces. 
    2. Put the cream in a pot, boil. Turn off the heat. Add chocolate and stir till it links and you receive a smooth frosting. Put aside for a while.

    1. Take the cake out from the fridge, distribute the frosting all over the top, and put back in the fridge for at least 20 minutes.
    2. After that time, decorate your cake with glacé cherries, distributing them quite far away from each other, so that you can cut equal cubes. It is also possible to put some whipped cream all over the cake and then, on it, a cherry, like here, in that recipe.
    3. Store in the fridge.

    Strawberry Yoghurt Cake

    I was looking for a nice strawberry cake recipe. But not the strawberry cake I’ve already made, ahh, I craved for something new, as I’m addicted to trying new recipes. And I found this strawberry yoghurt cake. One word: Wow! That’s the quickest and the one of the cheapest cake I’ve ever made! And I needed to bake 2 pans, one after another, day after day, cause it disappeared so quickly! I’m utterly shocked! And how many variations this one particular cake has, that’s unbelievable! Delicate, spongy, sweet, perfect for a morning coffee and for a nice lunch at work ;-) What’s more, that’s one of the ‘light’ cakes, so we can feel excused for eating half of the baking pan ;) (giggle) 
    I do recommend!
    The only thing that I found particularly difficult to explain to You is a polish dessert - powdered, quick, jelly-like, fruit-flavoured 'kisiel'. I can't find an equivalent for it in English. I do encourage You to look up for it. Wikipedia defines it as 'kissel' and explains a little bit what it is. If You are unable to buy it, You can easily use jam ;)

    Ingredients:

    1 glass = 250ml
    • 2 big eggs
    • 1 glass of greek yoghurt
    • 2 glasses of flour
    • 2 teaspoons of baking powder
    • 500g of strawberries
    • ¾ -1 glass of sugar
    • 2 tablespoons of vanilla sugar
    • 25g of melted butter (or 25g of oil)
    • 1 powdered strawberry kissel
    • 2-3 tablespoons of strawberry jam


    Optional ingredients:
    • Powdered sugar
    • X g of any other berries ;) (I had one bowl of currants from my garden, so I used them J)
    • Icing sugar


    Preparation:
    1. Bring eggs and yoghurt to room temperature.
    2. Prepare 3 bowls. Mix flour with baking powder very precisely and sieve to the 1st bowl. Put aside.
    3. Wash your fruit. Take 500g of strawberries, cut out the leaves, divide into halves (250g each), put in remaining 2 bowls. Cut the strawberries into halves (if the strawberry is really big – 3 pieces)
    4. Take a mixer’s bowl. Put sugar and vanilla sugar inside.
    5. Melt the butter in a small pot.
    6. Take a rectangular baking pan (preferably 20x30 cm, might be a little bit bigger), grease it precisely with soft butter. Put aside.
    7. Start preheating the oven to 165C.
    8. Prepare the kissel as the recipe on the packaging says. Mix with jam. Mix 1/3 of this kissel-jam mixture with one strawberry bowl. Put aside.
    9. Add eggs to the mixer’s bowl with sugars.
    10. Using a mixer, start beating for 7 minutes. After that time, put the mixer aside, add yoghurt, melted butter, sieved flour with baking powder and slowly, precisely, for a short time, stir, using a big spoon or spatula, only till all the ingredients link, not longer.
    11. Put the dough in previously prepared greased baking pan, distribute the dough all over the pan.
    12. Take a bowl with kissel strawberries. Here – preferably – don’t use much of the kissel as it may destroy the cake, it is perfectly enough if there is some kissel on the strawberry. Put the strawberries all over the cake, leaving some space between them (chequered pattern works and looks perfectly).
    13. When done, put it in the oven and bake for 20 minutes. Observe your cake, it might take less or more time for Your cake to be ready, as every oven works differently – You are probably the person who knows it best.
    14. After those 20 minutes, if the top is gold, use a toothpick to check, if it is ready inside. If not – cover the top with foil and bake for another 10 minutes or so.*
    15. Cool down, take out from the pan. Take the second bowl with strawberries and kissel, fill the holes in the cake - firstly with some kissel, then with a strawberry.
    16. Sprinkle the cake with (for instance) remaining fruit (or any other additional fruit if You have prepared them), powdered sugar, icing sugar or add remaining kissel all over the cake.

    *the cake should be much bigger, its sides should stick out from the pan, the top should be gold and a toothpick clean (if there is any cake glued to a toothpick, it is not ready yet)

    Tropical Pavlova

    I have no idea why I was hesitating for such long time... this is absolutely gorgeous... It exceeded all my expectations :) not only its appearance on the table is wonderful but the taste is just overdelicious! sweet meringue with tropical fruits! this is a real feast for senses ;) I do recommend! :) 
    For those afraid of baking a meringue - here is a tip - you can buy a ready-made one in a good bakery ;) And they are probably available in a few sizes - you can make a couple of small pavlovas or one, very big :) all of them will be same delicious :)
    Recipe for the meringue comes from this website, the rest is my idea, as Pavlova might be prepared in plenty different ways and will always taste good :)


    Note: meringue and lemon curd might be prepared earlier. But - lemon curd must be stored in a closed box, in the fridge.

    Ingredients:

    Meringue:

    • 4 egg whites from 4 big eggs 
    • 250g of sugar 
    • 1 teaspoon of potato starch 
    • 1 teaspoon of white or rice vinegar 

    Lemon curd:

    • 3 eggs 
    • lemon zest and lemon juice from 3 lemons 
    • 100g of powdered sugar 
    • 100g of cool butter 

    Whipped cream:

    • 500 ml of 36% cream 
    • 2 tablespoons of powdered sugar 
    • 1-2 packages of powdered whipped cream (to stiffen the whipped cream, or polish smietan-fix*) 

    * remember to stick to the proportions while using powdered products. If powder package says it is enough for 200 ml of cream/milk (no difference), and you're using 500ml of cream - add 2 packages.

    Top:

    • Tropical fruit (any, tinned or fresh) 
    • peach 
    • mango 
    • passionfruit 
    • lychee 
    • pineapple 
    • guava 
    • ... :) 
    • a handful of shredded coconut, to sprinkle the top 

    Preparation:

    Meringue:

    1. Preheat the oven to 120C (without convection, just this time) 
    2. Prepare a baking sheet, cover with baking paper. Draw a circle (diameter: for M size eggs - 18 cm, for L size eggs - 20 cm). Put aside. 
    3. Take a mixer and its bowl, put egg whites inside, start beating. After a while, start adding sugar, one tablespoon after another, stiring precisely all the time. The beating should take 10-15 minutes, not less. The meringue after the beating should be stiff and shiny. 
    4. When done, add potato starch and vinegar and beat for another few minutes so that it links. 
    5. Using a spoon or spatula, distribute the meringue on the baking sheet, on the drawn circle. Pull up the sides. (please don't play with it much, just few good moves, because the meringue might be destroyed). 
    6. Put in the oven and bake for 30 min in 120C. After that time, lower the temperature to 100C and bake for another 3 hours. 

    Lemon curd:

    Lemon curd requires a 'bath' so it is necessary to have a suitable pot and a bowl, that can be put one on another.

    1. Chop the butter into smaller pieces. 
    2. Take a pot, put some water inside, start boiling it. 
    3. Take a bowl that matches the pot, put eggs inside, beat. 
    4. Add lemon juice, lemon zest, powdered sugar and stir till everything links and there are no lumps. 
    5. Now put the bowl on the top of your pot (make sure the bowl stands out from the pot so that you don't get burn) and slowly keep heating up the mixture (don't boil it). 
    6. Keep adding the butter, one piece after another, stiring after adding. 
    7. When all the butter is melted in the mixture, turn off the heat and put the bowl with lemon curd somewhere aside, to let it cool down. 
    8. Then put your lemon curd in the fridge so that it stiffens more. 

    Finishing:

    1. Prepare fruit. If fresh - wash, peel (if necessaroy) and chop. Dry them on a paper towel. Put aside for a while. If tinned - half of the job is already done - just chop and dry. 
    2. When the meringue is baked and cooled down, distribute cooled down lemon curd all over the top. 
    3. Now, prepare whipped cream going through the steps below:

      Whipped cream: 
      1. Before preparing the whipped cream make sure your cream is really, really cool (I always put it in the freezer before beating, for around 10-15 minutes). 
      2. Take a mixer and its bowl, put cream inside, start mixing. After a while add powdered sugar and something to stiffen it (powdered whipped cream/smietan-fix). 
      3. Beat for around 10 minutes (depending on the power of a mixer it might take more or less time, keep paying attention not to make butter).

    4. Distribute whipped cream all over the top. 
    5. Just for the sake of safety, dry all the fruit again on a paper towel, before putting them on the meringue with whipped cream (as the juice from fruit may destroy both whipped cream and meringue). Make any pattern you wish out of the fruit. 
    6. Sprinkle with shredded coconut. 
    7. Store in the fridge.
